Maiden Voyage

A few weeks ago I had spent the afternoon at the pool and being outside had made me ravenously hungry. When I'm that hungry, I always crave pasta. I was really sick of my usual formula so I thought I would change it up a bit. I had some thick-cut ham slices in the fridge and some single serving frozen peas in the freezer. I fried up the ham in no-calorie spray and popped the peas in the microwave for a minute. Once the pasta was done, I combined all 3 of those ingredients with some garlic-infused olive oil, some laughing cow cheese wedges and a few handfuls of parmesan cheese and sautéed until all the cheese melted. And presto:

The result was a surprisingly delicious. The peas and the ham worked together really well and the olive oil and cheeses made a perfectly light sauce. Super easy, super yummy, pretty healthy. And best of all: showed me that I can create something without a recipe and have it still taste great.

how long does it take the laughing cow to melt? I usually stir mine in and to hot pasta and it just kinda clumps together. Was it the olive oil that helped that process along?

Yeah, I do think the olive oil helped bind everything together. The cheese does start our pretty clumpy but if you break it into bits at first if helps. So does some vigerous stirring :) isn't laughing cow the yummiest? I am amazed by it every time I try it in something new!

i love the garlic and herb. And the frnech onion is fab with crackers. sigh. :)
