Now, let me preface this by saying I am not a huge egg fan. If it is in something, like a breakfast sandwich or a breakfast burrito, that's one thing. But by itself, not an egg fan. That being said, I wasn't a huge fan of this recipe from Hungry Girl. Wasn't bad at all, just too egg-y for me. If you like eggs though, you'll love it. It's super easy and quick. There are several versions on the link provided. I did my own thing and threw in some diced ham I had and some cheddar cheese along with the Laughing Cow.
