Bleu Makeover

Ever since I discovered frozen, breaded chicken cordon bleu from my grocer's freezer in college, I have been in love. Something about the ooey gooey swiss cheese mixing with my side of Minute rice was just right. Unfortunately, that ooey gooey cheese and fried-like breading is not healthy, not even a little, not at all.


You can imagine how thrilled I was when I found out that Hungry Girl had a chicken cordon blue swap! Of course I was a little skeptical...no breading? no ooey gooey cheese? This can never be good. However...it was amazing! Somehow it tasted EXACTLY as good. 


And it was so so easy (especially if you can find already cut thin chicken breast). Bascially, spread the Laughing Cow on the chicken, place on a slice of ham, roll it up, secure with toothpicks and bam! As you can see, I paired it with some brown rice, which just happens to be Minute rice...so I haven't come THAT far!
