Pockets of Love

Around Christmas time, a family friend of ours had us over for a several course meal. She made us a version of "Love Birds", a recipe created by Rachel Ray, which is basically chicken with fig preserves and fontina cheese wrapped in puff pastry. It sounds so simple but was absolutely amazing. She couldn't find fig preserves anywhere though, so she substituted apricot preserves and it worked just as well.


Fast forward to this summer, I still had my sights on trying out this recipe but I never remembered to get the ingredients when I was shopping. I decided to attempt it with a few substitutes, based on what I had in the fridge: reduced fat crescent rolls instead of puff pastry, reduced-fat swiss cheese instead of  fontina and cranberry apple butter instead of apricot preserves. It turned out fantastic, which of course made me start thinking of all the other things I could fill these delicious little pillows with: other fruit preserves, other cheeses, salsa, marinara sauce, ranch, veggies...the possibilities are endless! Look for many more of these variations to come in the future.
