The Cheesiest

I have long been on a quest to make the perfect homemade mac n cheese. After many failed attempts at cheese sauces, I decided to emulate Noodles & Company's version, which appears to be simply butter and shredded cheese, but put my own twist on it. The result was delicious. Finally. I have made it in several variations since then, because it's just so easy.


Ingredients:

Cooked pasta (elbow macaroni or other small shape)

Brummel and Brown spread

Laughing Cow light swiss cheese wedges

Shredded cheese

Diced ham, bacon or other protein




I start with cooked elbow macaroni (I have also used baby shells and it works just as well). I top it with some melted Brummel and Brown spread (about a spoonful and a half), a wedge of Laughing Cow light swiss cheese (broken up into pieces to help it melt faster) and shredded cheese. Any kind of shredded cheese will do, I use what ever I have lying around (freshly grated cheddar is the best, but gruyere was a nice twist). Then I'll usually add a protein. Diced ham is my favorite, but some cooked bacon or sliced soy chik'n patty will do as well. Mix well, microwave for about a minute, stirring at intervals, to help the Laughing Cow melt (it can be a bit stubborn) and enjoy!
