So my cupcakes aren't nearly as cute as the burger cupcakes Liz made, but they are just as delicious AND have a fraction of the calories/fat. I read about making cupcakes this way online and thought it had to be too good to be true, but it turns out, it's not! Super easy, super tasty and better for you. Amazing.

Ingredients:
1 box of cupcake mix (Funfetti is my favorite, but any will do)
1 can of diet pop
(Use Diet 7up if you are making white or yellow cake mix,
Diet Coke if you are using chocolate cake mix)
All you do (are you ready for this?) is pour one can of pop into a bowl with one box of cake mix, whisk, pour into cupcake tins lined with fillers, bake according to the box and VOILA! There you have it. I leave mine in the oven a bit longer, but I think that is because my oven has a mind of it's own. Do the toothpick test if you are not sure if they are done.
Let them cool and then frost them. If you want to stick with the "healthy" theme, you can whip up a quick fat-free frosting, adapted from a Hungry Girl recipe. All you need is Cool Whip Free and Jello Vanilla Instant Pudding mix. Mix the two together to get the consistency and amount you desire and spread on top. I added some sprinkles just to be festive.
Tip: The cupcakes can be a bit sticky, but if you leave them in the fridge overnight, they will come out of their wrappers much easier.
