Ham and Peas, Please

This is a variation on the first recipe I posted on this site. I haven't been able to find the sliced ham I like in the store anymore, which is quite sad for several of the recipes I enjoy, but I HAVE been able to find diced ham, which is a fine enough substitute if all you're looking for is ham flavor. I am a fan of Ditalini (a pasta shape, often used in pasta salad), but I don't really like cold pasta salads. This is my hot version of a pasta salad, in a way. It's quick and easy, and I always make enough for dinner one night and lunch the next day.



Ingredients:

Ditalini pasta (or other small shape)

1 serving of frozen peas

Diced ham

Garlic flavored olive oil

1 wedge of Laughing Cow light swiss cheese


Cook the pasta to your liking. Cook peas. Place it in a bowl, add peas, diced ham and drizzle with olive oil. Portion all to your tastes and mix to distribute evenly. Break up a wedge of Laughing Cow cheese and microwave for about a minute, stirring at intervals, to help the Laughing Cow melt (it can be a bit stubborn) and enjoy!


This is a great lunch to take to work, if you have the use of a microwave. Just assemble everything the night before, except the Laughing Cow, and refrigerate. Then, when it's time to eat, add the cheese and stick in the microwave. Done.
