If you haven't already noticed, I'm a big fan of comfort food. When I found this recipe for slightly healthier chicken parmesan, I could not pass it up. It required a bunch of stuff I didn't necessarily have lying around the kitchen, like panko bread crumbs, but nothing too crazy. I used reduced-fat cheese mozzerella (half inside the chicken roll and half on top, roasted garlic marinara sauce and made a small amount of pasta to have on the side. The result was yummy. Next time I will use more italian seasoning with the breading but it had a satisfying crunch. Maybe the most labor intensive of the recipes so far, but totally worth it.
