I've always been a big fan of risotto but never considered taking the time to make it. When I stumbled across this recipe for a parmesan orzo, I was struck with how few ingredients it required and how easy it looked. Besides the one big thing: chopping onions. I had never chopped an onion before, and let me tell you, it was not fun. Especially because I have terrible knives. Regardless, the outcome of this dish was completely worth it.
This is the first recipe on here that I have actually followed directly, with no substitutions. I was able to find proscuitto that was already chopped into very small pieces so that eliminated a step. I would highly recommend that if you can find it. And yes, you just throw the orzo in uncooked. I was a little scared at first but it turned out fantastic.
