I didn't have a lot of ambition to make anything fantastic this week, but I didn't feel like anything frozen either. I had recently bought some tortillas and got the idea for a small pizza. I brushed some garlic-infused olive oil on the center of the tortilla, topped it with fat-free mozzerella, a little shredded parmesan and crumbled proscuitto. After about 10 mins in the oven at 400, it was pretty tasty. It was pretty small but I got frozen yogurt (fat free!) at Red Mango later so it evened out. Next time I'll brush olive oil on all of it because the crust was a little too crispy on the edges.
